Clover Potato and Feta Salad

Preparation time: 10 minutes
INGREDIENTS
For the salad:
700 g baby potatoes, halved & boiled or 4 large potatoes
2 packets fresh rocket or baby spinach
For the dressing:
1 cup Clover Classic Mayonnaise
2 Tbsp pesto of your choice
2 cloves garlic, grated
1 Tbsp lemon juice
salt and pepper, to taste
To serve:
parsley, chopped
clover Feta cheese
METHOD
Mix all the dressing ingredients together and season to taste with salt and pepper. Place potatoes into a large bowl pour over half the dressing and toss the potatoes until coated.
Place the rocket onto a serving platter or bowl and top with the potatoes. Drizzle over the rest of the dressing and top with fresh parsley and crumbled feta.
