
Clover Pizza Night

Makes: 2 medium-sized pizza
Recipe Time: 25-30 minutes
INGREDIENTS
For the dough
350g bread flour
2 ¾ tsp baking powder
1 tsp salt
1 tbsp Clover Olive Pride Extra Virgin Olive Oil plus extra for brushing
180ml warm water
Margherita pizza
1 cup tomato puree
1 cup mozzarella cheese, grated
5-6 leaves of fresh basil for garnish
1 tsp dried oregano
salt and pepper to taste
drizzle of Clover Olive Pride Extra Virgin Olive Oil
Bacon and feta pizza
1 cup tomato puree
1 cup mozzarella cheese, grated
1 round of feta, cut into 2cm squares
3 bacon rashers, fired and roughly chopped
1 red chilli, finely chopped (optional)
1 avo, skin and pit removed and sliced thinly for garnish
salt and pepper to taste
drizzle of Clover Olive Pride Extra Virgin Olive Oil
METHOD
Heat the oven to 200C. Mix together the flour, baking powder and 1 tsp salt in a medium-sized bowl. Add 1 tablespoon of Clover Olive Pride Extra Virgin Olive Oil and warm water then stir until it forms a ball. If stiff, add more water, it should be soft but not sticky.
Knead on a floured surface for 3-4 mins. Divide the dough into two, then flatten out each piece of dough into a 20cm circle. Place each pizza base onto a baking sheet - sprinkled with semolina. Carefully brush each pizza base with Clover Olive Pride Extra Virgin Olive Oil.
For the margherita pizza, spread the tomato puree onto the base followed by the mozzarella cheese. Sprinkle over the dried oregano and salt and pepper to taste. For the bacon and feta pizza, spread the tomato puree onto the base followed by the mozzarella cheese. Sprinkle over the bacon, feta and fresh chilli (if using) and season with salt and pepper.
Bake the pizzas for 15 mins – 20 minutes until the crust is golden brown. Remove from oven, top with garnish, and drizzle each pizza with Clover Olive Pride Extra Virgin Olive Oil and season with salt and pepper.
