Clover Olive Pride Rogan Josh Curry

Serves 4
Preparation Time: 10 minutes
Cooking Time 1 hour and 30 minutes
for the paste
4 Tbsp tomato paste
1 Tbsp turmeric
1 tsp cumin
1 tsp ground coriander
1 ½ tsp garam masala
2 Tbsp curry powder
salt & pepper to taste
for the curry
3 Tbsp Clover Olive Pride Extra Virgin Olive Oil
1kg stewing lamb pieces
1 onion, chopped
1 Tbsp garlic & ginger paste
2 star anise
2 cardamom pods
2 bay leaves / few curry leaves
500ml water
to serve:
naan bread
cucumber & mint raita
fresh coriander
Start by mixing together all the ingredients for the paste and set aside, meanwhile heat Clover Olive Pride Extra Virgin Olive Oil in a large pot. Add in star anise, cardamom pods, bay leaves, garlic & ginger paste and cook for about 1 minute, then add in onions and cook until translucent.

Add lamb and curry paste, stir until the meat is coated then top with 500ml water and allow to simmer for about 1 hour and 30 minutes. Stir occasionally and add more water if necessary. Cook until the meat is tender, you should be able to pull apart meat by using two forks.

Once the curry is ready sprinkle over fresh coriander and serve with cucumber raita and naan bread.
