Clover Olive Pride Deep Fried Avo Fries with Avo Dip

INGREDIENTS
For the avocado fries
2-4 firm avocados
1 cup tempura flour
1-2 cups sparkling water
2 cups panko crumbs
1 tsp black pepper, crushed
sea salt flakes to taste
2 cups Clover Olive Pride Blend of Seed Oils and Extra Virgin Olive Oil for frying

For the avo dip
1 avocado
½ cup mayonnaise
½ sour cream
1 tsp smoked paprika
½ tsp cayenne pepper
1-2 lemons, juiced
¼ cup walnuts, toasted
salt and pepper to taste

METHOD
For the dip, add all the ingredients except the lemon juice into a blender and blend to your desired consistency. Decant the contents into a bowl and mix in the lemon juice to your liking. Add more for extra tanginess. Place in the fridge to chill and serving time. For the avocado fries, heat the oil to a medium heat. Peel and slice the avocados in half lengthwise then cut the halves into 4 equal slices and repeat with all the avocado halves. Place the tempura flour into a bowl and add the sparkling water a little at a time, until you have a saucy consistency. The batter must be the consistency of custard and be able to coat the back of a spoon without dripping but must not be as thick as cake batter. Mix the panko crumbs with the black pepper. Dip the avocados into the tempura batter, making sure all sides are covered in the panko crumbs. Fry until golden brown then drain onto a plate lined with paper towel. Season immediately with the salt and serve with the avo dip. Enjoy!
