
Clover Olive Pride Chicken and Vegetable Tray Bake

INGREDIENTS
¼ cup Clover Olive Pride blend of seed oils and Extra Virgin Olive Oil
1 kg bone in, skin on chicken thighs & drumsticks
1 butternut, peeled & cut into chunks
3 red onions, peeled & cut into quarters
3 sweet peppers, seeds removed & cut into quarters
2 Tbsp Cajun chicken spice
2 Tbsp vegetable seasoning
salt & pepper
2 Tbsp honey
juice of 1 lemon
few sprigs of rosemary
To serve
Rice or mashed potato
METHOD
Preheat oven to 200ºC. Line a large baking tray with baking paper. Place the chicken and vegetables onto the prepared tray, spread these out evenly. Drizzle over Clover Olive Pride blend, honey, lemon juice and add your seasoning. Give it a good toss until everything is well coated. Top with a few sprigs of fresh rosemary, cover with foil and bake for 30 minutes.
After about 30 minutes remove the foil and roast in the oven for 20-30 minutes until the chicken is cooked through and skin is crispy.
Serve with rice or mashed potato and/or gravy.
