Clover Nutrikids Rainbow Rusks

Serves: One tray of rusks
Preparation time: 30 Minutes
Baking time: 4 hours and 25 Minutes 

INGREDIENTS 
Rusks
310 ml Clover Nutrikids full cream milk
1 cup brown sugar
250 g salted butter
750 g self-rising flour
1 tsp baking powder
2 large eggs
For the toppings
¼ cup dried cranberries
¼ cup chocolate chips
¼ cup rainbow sprinkles
To Serve
Serve with a warm cup of Clover Nutrikids full cream milk.

METHOD
Preheat the oven to 160°C.
Combine Clover Nutrikids full cream milk, butter and sugar in a medium sized saucepan and heat until sugar and butter are melted. Set aside to cool down to room temperature.
Combine all of the dry ingredients in a mixing bowl.  Then whisk the eggs into the wet ingredients. Pour the wet ingredients into the dry ingredients and mix them all together and combine until a smooth dough is achieved.
Line a 20 x 30 cm baking tin with baking paper. Evenly spread the dough in the tin and using your fingers, press holes into the dough. Press the different topping in three different layers. Be creative! Then bake for 20 - 25 minutes until golden brown. Remove from the oven and allow to cool.
Lower the oven temperature to 100°C.  Slice the rusks to your desired size and dry them out on an oven rack for approximately 4 to 5 hours.  Enjoy with a glass of Clover Nutrikids full cream milk.
