Clover Nolac Mango Lassi with Chai Bubbles

Clover Nolac Mango Lassi with Chai Bubbles

·1 cup Sago Pearls
·2 cups + ½ cup Clover Nolac Fresh milk
·1 tsp Cardamom, powdered
·1 tsp All spice, powdered
·3 tsp Cinnamon, powdered
·1 tsp Cloves, powdered
·1 tsp Ginger, powdered
·1 tsp Nutmeg, powdered
·2 cup Fresh Mango, diced
·1 cup Coconut cream
· ½ cup Desiccated coconut, toasted
Chai Bubbles:
1. Start by filling a medium size pot ¾ way up the side with water and bring to the boil, add the sago pearls and reduce the temperature to a simmer. Cook until almost completely transparent. Strain the sago out of the boiling water and rinse with cold fresh water.
2. In a separate saucepan, bring 2 cups of the Clover Nolac fresh milk and the chai spices to a simmer, add the sago and allow to cook completely through while absorbing the amazing chai flavors. Once cooked, strain once more and allow to cool while you put together the Mango Lassi
Mango Lassi:
1. Add the mango, coconut cream and ½ cup Clover Nolac Fresh milk to a blender or food processor, blend until smooth (if the lassi is too thick, add more Nolac until the correct consistency is achieved).
2. Fill a serving glass of your choice 1/3 of the way up the side with chai bubbles, fill the rest of your glass with the mango lassi and top with toasted desiccated coconut and picked mint.
