Clover Nolac Beef Steak with Creamy Mushroom Sauce
Serves: 2-3

INGREDIENTS
2-3 beef rump or sirloin steaks
2 tbsp olive oil
1tsp coriander seeds
1 tsp coffee granules
1 tsp dried thyme
Salt and pepper to taste
½ onion or 1 shallot, finely chopped
1 clove garlic, chopped
250 brown mushrooms, chopped
2 tsp flour
1 cup Clover Nolac Full Cream Fresh milk
METHOD
In a pestle and mortar, combine the coriander seeds, coffee granules, thyme, salt and pepper. Grind until slightly fine. Pat the steaks dry with paper towel and lightly season with the spice mix.
Heat a pan until hot then add the steaks. Cook according to your preference of doneness. Once cooked, sprinkle with more seasoning and set aside to rest.
To the same pan, add the chopped onion or shallot to sauté until translucent. Add the mushrooms and cook for a few minutes. Season with salt and pepper then sprinkle over the flour. Cook for 1 minute then gradually pour in the Clover Nolac Full Cream Fresh Milk. Cook until the mixture slightly thickens.
Slice the steak and spoon over the mushroom sauce to serve.
