Clover Manhattan Mojito Mocktail

Clover Manhattan Mojito Mocktail

Serves: 4
Preparation time: 15 minutes

3 large lemons, sliced
½ fresh pineapple, sliced
bunch of mint, leaves removed
2 cups ice, crushed
¼ tsp bicarbonate of soda
1.5L Clover Manhattan Black Ice Tea Pineapple flavour
500ml sparkling water

Sugar-lime mixture
2 cup granulated sugar
zest of two limes

For the garnish
fresh pineapple slices
fresh lemon slices
4 colourful straws

In a large jug, combine the lemon slices, pineapple slices and mint leaves. Using the back of a wooden spoon, press the ingredients together to release their fresh juices. Sprinkle the bicarbonate of soda on top of the mixture. Add the crushed ice and top with Clover Manhattan Black Ice Tea Pineapple. Allow to stand for 5-10 minutes. 
Meanwhile, generously dust sugar and lime zest onto a serving plate. Wet the rim of each tumbler and dip into the sugar-lime mixture. Once your mojito mocktail has had enough time to infuse, pour into each glass and garnish with extra lemon, pineapple and mint to your liking. Pop in your colourful straws and serve!
