Clover Mama Bake Lemon Biscuits

Lemon Biscuits

Mama Bake Lemon Biscuits
Makes: ±15 double biscuits
Preparation: 50 minutes
Cooking: 25 minutes
250 g flour
100 g sugar, plus extra for dipping
100 g Clover Mama Bake, cut in pieces
1 egg
1 t baking powder
Lemon cream Filling
40 g Clover Mama Bake 
⅓ cup icing sugar, sifted
½ t lemon zest
1½ t lemon juice
Preheat the oven to 180 °C. Line a baking tray with baking paper.
Place flour, sugar, Clove Mama Bake, egg, baking powder and lemon zestin the mixing bowl of the Thermonix and mix 20 sec/ speed 6.
Place some sugar on a plate. Pinch together 1 tablespoon of dough and roll into a small ball (3 cm diameter). Dip the top in sugar, place on prepared baking tray and flatten using a fork. Repeat with the remaining dough.
Bake for 20 minutes or until a light golden colour. Allow to cool on a cooling rack 
Lemon Cream Filling
Beat the Clover Mama Bale until smooth, gradually add the icing sugar, beat until mixture is light and creamy. Beat in the lemon zest and juice.
Join biscuit with the lemon cream filling.
