Clover Lettuce Wraps with Chickpeas, Avocado and Smokey Mayonnaise

INGREDIENTS

Chickpeas

1 tin chickpeas, drained and rinsed
1 Tbsp olive oil
1 tsp ground cumin
¼ tsp chilli powder
¼ tsp cayenne pepper
½ tsp salt
 
Wraps
1 head lettuce (Iceberg, cos or butter) 
¼ cup Clover Classic Mayonnaise
½ tsp smoked paprika
salt and pepper to taste
2 avocadoes, sliced
1 apple, sliced 
black sesame seeds, to serve (optional)
micro herbs, to garnish
 
METHOD
 
Chickpeas
Carefully dry the chickpeas. 
In a medium bowl, add dried chickpeas, olive oil, cumin, chilli powder, cayenne pepper and salt. Toss well to coat evenly.
Heat a large frying pan over medium heat and fry the chickpeas for about 8—10 minutes, stirring regularly. Scoop out and keep aside. 
 
Wraps
Carefully break the lettuce leaves loose and gently rinse the leaves under cold water. Dry with a clean kitchen towel.
In a small bowl, mix the mayonnaise, smoked paprika and salt and pepper.
Stuff each lettuce leaf with chickpeas, avocado slices, apple slices, a dollop of flavoured mayonnaise and black sesame seeds, if using. Garnish with micro herbs.
