Clover Lactose-Free Frozen Berry Popsicles

Serves: 6
Preparation time: 10 minutes, plus 3 hours to set

INGREDIENTS
For the berry frozen yoghurt popsicles:
1 cup raspberries
1 cup blackberries
3 cup Clover Nolac Lactose Free Plain Dairy Snack
2 tsp honey

For the berry compote
1 ½ cup frozen mixed berries
½ cup sugar
1 Tbsp lemon juice

To serve
berry compote
mint

METHOD
Start by preparing the berry compote, in a medium saucepan combine frozen berries, sugar and lemon juice. Allow this to simmer over medium heat for 10 minutes until the sugar has dissolved, remove from the heat and allow it to cool completely. Spoon about 2 Tbsp of the mixture into each mould and place into the freezer.

In a large bowl add berries, Clover Nolac Lactose Free Dairy Snack and honey. Mix together until well combined, then pour into a freezer safe container or popsicle mould.

Insert a wooden sucker stick into each mould and freeze for 3 hours or overnight until firm then remove from the moulds. Serve with a generous amount of berry compote if you like and fresh mint sprigs and enjoy!
