Orange & Poppy Seed Muffins

Clover Krush Orange & Poppy Seed Muffins

melted butter, to grease
1 tbsp poppy seeds
¾ cup milk
2½ cups  (375 g) self-raising flour
¾ cup (155 g) castor sugar
125 g butter, melted
2 eggs, lightly whisked
2 tsp finely grated orange rind
¼ cup Clover Krush Orange Flavour
icing sugar, to dust
strips of orange zest or dried orange slices, to decorate

Preheat the oven to 190 °C. Brush twelve ⅓-cup capacity non-stick muffin pans with melted butter to lightly grease. 
Combine the poppy seeds and a ¼ cup of the milk in a small bowl. Set aside for 10 minutes.
Sift the flour and castor sugar together into a large bowl. Add the poppy-seed mixture along with the remaining milk, melted butter, eggs, orange rind and Clover Krush, and stir with a metal spoon until just combined, do not overmix.
Divide the batter equaly among the muffin pans. Bake for 25 minutes or until a skewer inserted into the centres comes out clean. 
Remove from oven and turn onto a wire rack. Serve warm or at room temperature dusted with icing sugar. Decorate with strips of orabge zest or dried orange slices
