Clover Jam Squares

Clover Jam Squares 
Recipe: Daleen van der Merwe
Makes: ± 40 squares
Preparation: 15 minutes

250 g butter, at room temperature
1 cup sugar
2 extra large eggs
1 Tbsp vanilla essence
4 cups cake flour
4 t baking powder
½ t salt
300 g smooth apricot jam
Clover Classic Custard, to serve
Preheat the oven to 180 °C. Grease a 30 x 25 cm baking sheet and line with baking paper - two sides overhanging.
Mix the butter, sugar and eggs together well. Add the vanilla and mix through.
Sift the flour, baking powder and salt together and add to the butter mixture. Mix to a soft but firm dough.
Place ⅓ of the dough in the fridge until cold.
Press the rest of the dough (⅔) evenly on the bottom of the prepared baking sheet. Spread with the apricot jam. 
When the dough that is placed in the fridge is cold, grate it roughly over the jam – do not press down.
Bake about 25 minutes until light brown. Let it cool down, then cut in squares. 
Serve with Clover Classic Custard.
