Herby Steamed Bread with Spinach

Herby steamed bread
1½ cup Clover Good Hope Soy Milk, lukewarm 
1 packet instant yeast
1½ Tbsp brown sugar
2 cups flour, extra for dusting
¼ t salt
½ Tbsp dried thyme
1½ Tbsp olive oil
Spinach with garlic and onion
2 onions, sliced
1 Tbsp olive oil
1 bunch spinach
2 garlic cloves, thinly sliced
½ t ginger paste
1 t turmeric
1 Tbsp curry powder
½ Tbsp BBQ spice
1 t sugar
¼ cup Clover Good Hope Soy Milk
salt and pepper to taste
Herby steamed bread
In a small bowl, mix the lukewarm Good Hope Soy Milk with the yeast and half of the sugar. Stir together then set aside to bloom for 5 minutes.
In a separate bowl, sift the flour and salt, then add the remaining sugar and thyme. Stir together. 
Add the oil and Good Hope Soy milk mixture and stir together. Knead the dough until smooth. Transfer the dough into a lightly greased bowl, cover with plastic wrap and a dish cloth then set in a warm place to proof for an hour.
Once proofed, knock out the air from the dough then transfer it back into the greased bowl. 
Add some water to a big saucepan and bring the water to a boil. Put the bowl with the dough inside the saucepan and close with a lid. Wrap the pot lid with a kitchen towel and steam for 35—40  minutes.
The kitchen towel will assist in absorbing the steam and avoid making the dough soggy on top.
Creamy spinach with garlic and onion
While the bread is being steamed, make the spinach. In a pan, sauté the onion in the oil on medium heat until translucent. Add the Spinach, garlic and spices and stir thoroughly for 2 min before adding the Good Hope Soy Milk. Cook down or reduce for 25 min, seasoning throughout the entire process.
Serve warm with the steamed bread.
