Clover Hashbrown Breakfast Pizza

Cooking time: 30 minutes

INGREDIENTS
4 potatoes, peeled & grated
¼ cup all-purpose flour
1 whole egg, large
5 large eggs, scrambled
300g Clover Cheddar cheese, grated
250g boerewors, cooked & sliced
250g bacon
Salt and Pepper

To serve:
fresh basil
roasted tomatoes
sour cream, optional

METHOD
Preheat oven to 180 degrees centigrade. In a large bowl mix together the potatoes, flour, cheese and 1 whole egg. Season the mixture with salt and pepper. Transfer the mixture to a large, greased baking tray, shape the mixture into a circular crust and bake for 15-20 minutes. Once the crust is ready, top with eggs, bacon, boerewors and Clover Cheddar cheese. Bake for another 10 minutes until the toppings are cooked and the cheese is melted. Garnish with roasted tomatoes, sour cream and fresh basil and serve.
