Clover Gingerbread with Cream Cheese Icing

Makes: 1 gingerbread
Preparation: 10 minutes
Cooking: 40 minutes


275 g cake flour
2 tsp ground ginger
1 tsp ground mixed spice
1 tsp bicarbonate of soda
pinch of salt
125 g salted butter, melted
½ cup golden syrup
100 g castor sugar
½ cup boiling water
1 whole egg

Cream Cheese Icing
400 g plain smooth cream cheese, at room temperature
215 g icing sugar, sifted
30 g salted butter, softened
cinnamon sugar 

To Serve
500 ml Clover Classic Dairy Snack (vanilla flavour)


Preheat the oven to 180 °C. Line a loaf pan with baking paper and grease.

Sift the flour, spices, bicarbonate of soda and salt together.
Whisk in the remaining ingredients.
Pour the mixture into the prepared loaf pan and bake for 30—40 minutes. or until cooked.
Remove the loaf from the pan and cool on a wire rack.

Cream Cheese Icing
Whisk the cream cheese, icing sugar and butter together until smooth. Spread the icing over the top and sides of the cooled gingerbread. Sprinkle the chopped glazed ginger on top.
Cut in slices and serve with the Clover Dairy Snack.
