
Clover Fruits of the Forest Granadilla Cake

INGREDIENTS
¾ cup vegetable oil
2 eggs, large
1tsp vanilla extract
¼ cup granadilla juice
1 cup Clover Fruits of the Forest (Granadilla flavour)
1¾ cups caster sugar
2 cups self-raising cake flour
pinch of salt
For the Clover Fruits of the Forest frosting
2 cups Clover Fruits of the Forest (Granadilla flavour)
1 cup Icing Sugar
1 tsp Vanilla essence
1 cup Heavy Cream
To garnish
¼ cup granadilla pulp
fresh mint leaves
METHOD
Preheat the oven to 160°C. Grease and line a 20cm round cake tin with baking paper. Place the oil, eggs, vanilla extract, granadilla juice, Clover Fruits of the Forest and sugar in a large bowl and whisk to combine. Sift in the flour and then add the salt and whisk until smooth. Be careful not to over mix the batter. Pour batter into the tin and bake for 50–55 minutes or until cooked when tested with a skewer. Allow to cool in the tin for 5 minutes before removing it from the tin and allowing it to cool completely on a wire rack. To make the icing, place ingredients into a medium sized mixing bowl and whisk with an electrical beater until stiff and spreadable. Carefully place cake onto a cake stand or plate and then generously smooth icing over the top of the cake, drizzle on some granadilla pulp and garnish with fresh mint. Enjoy!
