Clover Fried BBQ Mince with Scone Bake

Clover Fried BBQ Mince with Scone Bake

Serves: 3—4

2 Tbsp oil
1 onion, chopped
1 red or yellow pepper, chopped
2 cloves garlic, finely chopped
2 carrots, peeled and cut into small blocks
400 g mince
⅓ cup barbecue sauce
salt and pepper
100 g tomato paste
½ cup water or beef stock
1 t brown sugar
¼ cup Clover Mayonnaise Mild 1
1½ cup flour
1½ t baking powder
90 g cold butter, grated
35 g mature Cheddar cheese, grated
¾ cup milk
90 ml fresh cream
melted butter for brushing
Heat an ovenproof pan, add the oil, and fry the onion and red pepper until the onion is soft.
Add the garlic and carrots and cook for 2 minutes more.
Add the mince, barbecue sauce and season with salt and pepper to taste. Cook, stirring, until browned all over.

Add the tomato paste, stock and sugar and cook for 15 minutes, stir occasionally. 
Stir in the mayonnaise and remove from the heat.
In the meantime, preheat the oven to 180 °C.
Sift the flour and baking powder together in a bowl. Cut in the butter with a blunt knife until the texture resembles coarse breadcrumbs. Add the cheese, milk and cream and mix very lightly.

Spoon the sticky dough on top of the mince in the pan. Brush the dough with melted butter. Bake for about 35 minutes, or until the scones are golden brown. Lift the topping slightly with a knife to check if it is cooked underneath.

If necessary, cover with foil and bake until completely cooked.
