Festive side dishes for a roast 

2 bulbs fennel, sliced
2 T Butro
1 tsp ground coriander 
Zest and juice of one orange
Fresh coriander
Salt and pepper
1 orange, segmented
3 pak choi, sliced into wedges
Add Butro oil to a bowl, season with salt, pepper and ground coriander. Add the sliced fennel and pak choi to the oil mixture and toss together. Heat a griddle pan and griddle the veg. set aside. 
To make the dressing, add orange juice, zest and coriander to a small bowl and season with salt and pepper. Add a dash of Butro to orange dressing and give it a good mix. Arrange the grilled veg on a platter, drizzle over the dressing and add the segmented oranges. 
Broccoli and leek bake
200g Tenderstem Broccolli, 
3-4 leeks, cleaned  and sliced in half
2 T Butro
2 T flour
1-2 cups milk
salt and pepper
Pinch of curry powder
Clover White Cheddar cheese
Squeeze of fresh lemon
Add Butro to a saucepan, then add in the flour and allow the flout to cook out, for about a minute. Gradually add in the milk until the sauce slightly thickens. Season with salt, pepper and curry powder and stir in some of the cheese. 
Arrange the veggies in a casserole dish and drizzle over the sauce. Roast in the oven at 200 degrees for about 20-3 minutes, until the broccoli is slightly charred at the tips. Remove from oven and add a little more cheddar cheese and squeeze over some fresh lemon to serve. 
Roast potatoes
1 pack baby potatoes, peeled 
cumin seeds
Salt and Pepper
½ cup Butro
Parboil the potatoes, drain the water then give it a good shake in the pot with the steam. Place onto a baking tray along with the cumin seeds, salt and pepper. Add the Butro oil and toss everything together. Roast in the oven until the potatoes are golden and crispy
