
Clover Decadent Chocolate Brownies

INGREDIENTS
½ cup chia seeds, ground
½ cup water
2 cups (200 g) almond flour
½ cup xylitol
⅓ cup coconut flour
⅓ cup whey protein powder
1 tsp baking powder
½ tsp bicarbonate of soda
½ cup cocoa powder
½ tsp salt
⅓cup buttermilk
3 eggs
125 g butter, melted
2 Tbsp brewed coffee
½ tsp vanilla extract
To Serve
5 Tbsp Clover Bliss Double Cream Yoghurt
300 g mixed FRESH berries
mint leaves, to garnish
METHOD
Preheat the oven to 180 °C. Grease a 30cm x 23cm shallow ovenproof dish or cake tin and line with baking paper.
Combine the ground chia seeds and water in a small bowl. Set aside.
Combine the almond flour, xylitol, coconut flour, whey protein powder, baking powder, bicarbonate of soda, cocoa and salt in a large bowl.
In a separate bowl, whisk together the buttermilk, eggs, butter, coffee and vanilla. Add the chia seed mixture and whisk until there are no lumps.
Fold the wet ingredients into the dry ingredients until well combined. Pour the batter into the prepared dish. Bake for 35 minutes or until a skewer comes out clean.
Let it stand for 10 minutes before cutting into squares. Serve with the Clover Bliss yoghurt and mixed berries and garnish with fresh mint leaves.
