Clover custard slices with a choice of two toppings

Clover custard slices with a choice of two toppings

Ingredients 

Tart
1 packet (200 g) Cream Crackers
1 litre Clover Fresh Milk
½ cup sugar
½ cup custard powder
80 g butter, cut into cubes
1 tsp vanilla essence
 
Topping 1
100 ml icing sugar, sifted
Juice of 1 lemon
 
Topping 2
1 tin condensed milk
½ cup lemon juice
 
Method 

Tarts
Grease a 28 x 19 cm dish or spray with cooking spray.
Pack a layer of Cream Crackers on the bottom of the dish. (Keep the breaking lines of the biscuits in the same direction.)

Heat half of the milk in a saucepan over medium heat. Beat the sugar, custard powder and the rest of the milk together. Add this mixture to the warm milk, whisking constantly, until it thickens, about 8 to 10 minutes.

Remove from the heat, add the butter and vanilla and stir until the butter has melted. Pour this mixture over the biscuits in the dish – pour slowly to prevent the biscuits from moving. Even the surface.

Pack another layer of Cream Crackers on top, with the breaking lines in the same direction as the bottom layer. Put in the fridge for 12 hours to set. Spoon the topping of your choice over, spread it evenly and let it stand until set.

Cut in slices, following the breaking lines of the biscuits.
 
Topping 1
Mix the icing sugar and lemon juice until smooth.
 
Topping 2
Beat the condensed milk and lemon juice together until stiff.
