Clover Crunchy Baked Apples

Serves:  6
Preparation: 15 minutes
Cooking: 40 minutes
3 large Granny Smith apples
2 Tbsp lemon juice
250 ml water
2 Tbsp butter, softened
¼ t lemon zest
½ cup cake flour
¼ t ground cinnamon
90 g cold butter, grated
½ cup toasted muesli
½ cup coconut
2 Tbsp soft brown sugar
Clover Fruits of the Forest with Cereals, to serve
Cut the apples in half, scoop out the core from the centre without breaking the skin.
Brush the apples with the lemon juice and place the apples in an ovenproof dish.
Add the water, cover with foil and bake for 20 minutes (or microwave on HIGH for about 5 minutes) or until just tender. Drain.

Mix the two tablespoons of soft butter and lemon zest and dot into the centre of each apple half.
Sift the flour and cinnamon together in a bowl, rub in the cold butter. Mix in the muesli, coconut and sugar. 
Lightly press the mixture on the apple halves to cover. Bake for 20 minutes or until the topping is golden brown.

On the same pan add dollops of Clover Fruits of the Forest with Cereals and serve.
