Clover Creamy Mealie Meal with Mushrooms and Gremolata

Creamy mealie meal
2 cups full-cream milk or plant-based milk
1 cup water
1 t salt 
1 heaped cup quick cooking mealie meal
3 Tbsp Clover Classic Spread
½ cup grated parmesan or pecorino cheese
2 Tbsp Clover Classic Spread
500 g mixed mushrooms, half roughly chopped, and half sliced
3—4 sprigs fresh thyme
1 Tbsp balsamic vinegar
salt and pepper 
3 Tbsp olive oil
1 handful fresh parsley, finely chopped
½ tsp garlic, finely chopped
1 tsp lemon zest
1-2 Tbsp lemon juice
2 Tbsp sunflower seeds, toasted and roughly chopped
1 pinch salt
To garnish
parmesan shavings, to garnish
fresh thyme
fried exotic mushrooms
Mix all the ingredients for the gremolata together in a small bowl. Keep aside
Creamy mealie meal
Add the milk, water and salt to a large saucepan over high heat and bring to the boil. Pour in the mealie meal, whisking continuously until the mixture has thickened. Turn the heat down to low and simmer until cooked. 
Add the classic spread and the grated cheese, whisk until smooth and fluffy. 
Remove from the heat and set aside. It can be gently warmed through before serving, adding a dash of milk to loosen.
Heat a large frying pan with the Classic Spread over high heat. Fry the mushrooms and thyme for 4—5 minutes, or until golden brown.
Stir in the vinegar and season to taste.
Serve the cream mealie meal in warm bowls topped with the mushrooms and a spoonful of gremolata. Garnish with parmesan shavings and fresh thyme.
