Clover Creamy and Cheesy Pancake Lasagne

Tomato & Mince Mixture
1 pack streaky bacon, cut into small pieces
2 medium onions, chopped
4 garlic cloves, minced
500 g beef mince
1 tbls smoked paprika
2 sprigs fresh thyme
3 fresh bay leaves
2 tbls tomato paste
1 400g tin chopped tomatoes
Salt and pepper to taste

Cheese Sauce
1 400ml packet of store-bought white sauce
2 cups Clover Gouda Cheese, grated
1 tbls whole grain mustard
¼ tsp ground nutmeg
Salt and pepper to taste

30 g unsalted butter, melted plus extra for cooking.
120 g cake flour
2 large eggs
70 ml full cream milk
70ml water

To assemble 
2 cups Clover Gouda Cheese, grated
large oven safe pan (26cm)
fresh Italian parsley for garnish.
Salad to serve 

Start by making your tomato and mince mixture. Gently fry off the bacon to render off all the fat.
Remove bacon bits and place in a bowl and the set aside.
Fry off the onions in bacon fat until translucent. 2-3 minutes. Then add the garlic and stir until cooked.
Add mince and stir until the mince is cooked through and until all the moisture has evaporated.
Next, add the smoked paprika, thyme leaves, bay leaves, bacon bits and tomato paste and mix into the mince until evenly distributed.
Allow to cook for about 5 minutes until the tomato paste is cooked through. Add the chopped tomatoes and cook until the mixture thickens to almost a paste. Season with salt and pepper to your taste and set aside to cool.
