Clover Classic Unicorn custard cups

Clover Classic Unicorn custard cups

1 ltr Classic custard 2 tbsp cornflour
1 vanilla sponge cake
1/4 cup water
Unicorn coloured butter cream frosting for top Red, blue, green and yellow food colouring Rainbow pearls, to decorate

In a medium saucepan, pour in the Classic custard bring to a slight simmer on low to medium heat. In a small bowl mix water with cornflour until fully incorporated then pour into simmering custard. Increase heat to medium or a gentle boil while stirring until mixture has thickened. Make sure the cornflour taste has cooked away before removing from heat. Remove the mixture from the heat and divide into 4 small bowls and cool completely.

Once fully cooled, mix a different colour of the food colouring into each of the divided custard bowls. Make sure the colours are light and pastel and not too dark and heavy. You should have pink, light green, pastel blue then in the last one mix blue and red to form a light purple colour.

To assemble begin at the bottom by cutting the vanilla sponge into round shapes to fit into the cup. Follow with a layer of each of the custard colours then a final layer of the sponge.

Top with the unicorn coloured butter cream then garnish pearls and confetti.
