
Clover Classic Sticky Chicken with roast corn salad
Cooking time: 30-40 minutes
Serves: 4-6
Ingredients
1 cup Clover Classic mayo
¼ cup chutney
½ cup tomato sauce
2 cloves garlic, crushed
Salt and pepper
4-8 Chicken pieces (drumstick and thighs)
For the roast corn salad
2 corn on the cob (mielies), braai’ed or roasted
1 cup cherry tomatoes, halved
Half red onion, chopped
1 avo, chopped into cubes
Salt and pepper to taste
Method
Preheat the oven to 180C.
Combine the Clover Classic mayo, chutney, tomato sauce and crushed garlic in a large bowl. Add in the chicken pieces and season with salt and pepper. Allow to marinade for at least 20 minutes.
Place the marinated chicken pieces onto a greased and lined baking tray and bake in the oven for 30-40 minutes, until the chicken pieces are cooked through. Alternatively, place onto a braai grill and turn every 10 minutes to avoid burning. Baste the chicken with the marinade as it starts to cook.
To make the salad, toss all the corn salad ingredients together and season with salt and pepper. Serve with cooked chicken and a dollop of Clover Classic Mayo.
