Rigatoni and Peas

Clover Classic Rigatoni and Peas

Serves 4
4 cups cooked rigatoni pasta, cooked
2 cups frozen peas
2 tbsp Clover Butter
1 red pepper, diced small
For the sauce:
⅔ cup Clover Classic Plain yoghurt based dairy snack
2 teaspoon minced garlic
Zest of lime
Lime juice to taste
Salt and pepper to taste
1 cup spring onion, sliced thinly
Parmesan cheese to taste
In a bowl combine the Clover Classic, garlic, and lime zest. Then add the lime juice, salt, and pepper to taste. Stir well and set aside.
In a pan on medium heat, add butter followed by the red pepper and sauté for 3 minutes before adding the spring onion. Add the peas and rigatoni, cook for 2 minute then sauce. Cook until completely warmed through before sprinkling some parmesan.
Serve warm.
