
Clover Classic Potato Salad
Ingredients
6 medium potatoes, cooked, peeled and cut into chunks
200ml Clover Classic Mayo
1 tbsp mustard
1 tsp apple cider vinegar
Salt and pepper to taste
2 spring onions, chopped
1 cup celery stalks, chopped
3 pickled gherkins, chopped
3 hard boiled eggs, cut into quarters
Paprika for garnishing
Method
In a large bowl combine mayo, mustard, vinegar and season with salt and pepper. Stir well.
Pour the sauce over the cooked and cooled potatoes and add the chopped spring onions, celery and pickled gherkins. Toss together until well combined
You can add the eggs into the salad or over the top of the Potato salad. Sprinkle over the paprika and serve.
