Clover Classic One Pan Chicken and Rice

Clover Classic One Pan Chicken and Rice

Serves 3-4

4 Chicken thighs
Olive oil
1 cup long grain rice 
1-1,5 Litre Chicken Stock
1 white onion
Fresh coriander
1 tsp paprika 
1 tsp garlic powder
1 tsp ground cumin
1 tsp chilli powder
1 tsp mixed herbs 
Salt and pepper
¾ Clover Classic Mayo, level 1
1 lemon, sliced
150g butternut, cubed
150 green beans/broccoli
Fresh coriander 
Preheat the oven to 180C
Mix all the spiced together and use half to season the chicken. 
In a large oven safe pan, heat the olive oil and sear the chicken, skin side down until brown and crispy. Set aside. 
In the same pan, heat up a glug of olive oil and fry the onions until softened. Add the dry rice and chicken pieces and butternut. Add just enough stock to cover the rice. Top with lemon slices. 
Cover with lid or foil and bake for 40 minutes. The rice should be softened. 
Create a sauce by mixing together the mayo, the remaining spice mix and the remaining chicken stock. Pour the sauce over the dish and add the green beans and cook for a further 20 minutes. In the last 10 minutes, remove the foil or lid. 
Garnish with fresh coriander
