Clover Classic Malva pudding

Clover Classic Malva pudding
Baking time: 30-35 minutes
Serves: 3-4
For the Malva pudding
1 egg
1 tsp vanilla essence
1 tbsp butter, softened
1 tbsp apricot jam
1 cup sugar
1 tbsp vinegar
1 cup milk
1 cup flour
1 tsp bicarb
1/2 tsp baking powder
pinch of salt
For the sauce
½ cup milk
½ cup cream
½ cup sugar
½ cup butter
Clover Classic Custard for serving
Preheat the oven to 180C.
Whisk together the egg, vanilla essence, butter, sugar and jam. Beat until slightly pale in colour. Add in the vinegar, milk, flour, bicarb, baking powder and a pinch if salt and mix until well combined.
Pour the batter into a greased oven dish and bake for 30-35 minutes, until the pudding appears brown
Combine the ingredients for the sauce in a saucepan and cook for a few minutes, until the butter and sugar is melted. Pour over the baked malva pudding and allow to sit for a few minutes
Serve Malva pudding warm with a generous dollop of Clover Classic custard
