
Clover Classic Lemon Posset

Ingredients
300ml double cream
75g castor sugar
125ml Clover Classic custard
1 lemon, juiced and zested
Passion fruit for garnish
berries for garnish
Method
Place double cream, castor sugar, Clover classic custard and zest and juice of lemon into a saucepan. Bring mixture to a light simmer and remove. The key is to not let the cream boil too long. Divide the mixture into 4 ramekins and leave to set in the fridge.
Once set, serve with berries and garnish with passion fruit pulp.
