Clover Classic Custard Crème Brulee Tart

For the base:
100g Castor sugar
200g Clover MooiRivier butter, cubed
300g Cake flour
For the brulee:
3 Egg yolks
750 ml Clover classic custard
¼ cup castor sugar
Berries to garnish
Preheat the oven to 1600C
Combine the butter, sugar and flour until a dough starts to form. Wrap in cling film and place in the fridge to set for 30 minutes. Roll the dough out, press into a grease tart dish and bake for 12-15 minutes or until golden. Remove and allow to cool.
To make the brulee:
Heat the custard in a sauce pan. Slowly add the warm custard to the egg yolk, while constantly whisking. Pour the custard into the tart base.
Pour water into a deep baking dish. Place the tart dish into the water and bake for 30-40 minutes. Remove, allow to cool completely. Pour over the castor sugar and using a blowtorch caramelize the sugar. Decorate with berries and serve!
