Custard Cream Cookies

Clover Classic Custard Cream Cookies
For the cookies
250g butter, softened
½ cup icing sugar
1 tsp vanilla essence
1 ½ cups flour
½ cup custard powder
For the filling
1 cup Clover Classic custard
1 tsp vanilla essence
¼ cup corn flour
Preheat the oven to 180C.
In a mizing bowl, cream together the butter and the icing sugar until well combined. Add in the vanilla essence, flour and custard then mix well.
Roll into balls then flatten into cookie shapes using a fork. Place onto a lined baking tray and bake for 10-12 minutes, until light golden in colour. Allow to cool.
Prepare the filling by mixing the cornstarch and Classic custard together. Transfer to a saucepan and heat up whilst whisking. The mixture will start to thicken. Once very thick, remove from heat and whisk in the vanilla essence.
Sandwich the cookies together my placing a dollop of the custard mixture in the centre of the smooth end of one cookie and sandwich with another. Repeat with the remaining mixture.
