Clover Classic Brown Lentil Nachos

INGREDIENTS
2 tbsp oil
1 onion, chopped
2 garlic cloves, grated
1 tsp cumin
1 tsp tumeric
1 tsp ginger powder
2 tsp paprika
50g tomato paste
200g brown lentils, soaked overnight
1-2 cups veg stock
½ cup BBQ sauce
¼ cup Clover Classic Mayo 3
125g pack of nacho chips
1 cup shredded cheese of your choice
½ cup sweetcorn
2 tomatoes, chopped
¼ pickled jalapeños, sliced, more if you want it spicier

To serve
1 cup guacamole
1 cup sour cream
fresh coriander, for garnish

METHOD
Heat the oil in a pan then add the onions and sauté for 2 minutes before adding the garlic and spices. Fry for about another 2 to 3 minutes then add the tomato paste and fry for another minute before adding the lentils. Allow the lentils to fry and be fully covered in the spices before adding the stock. Add enough stock to cover the lentils then, reduce the heat to a simmer and cook for about 15 to 20 minutes until all the liquid is soaked up. Once the lentils are cooked, fold in the BBQ sauce and Clover Classic Mayo 3 and stir until fully combined. Pre- heat the oven to 190°C.
To assemble the nachos: use a flat baking tray, start with a layer of the nacho chips then half of the lentils, half of the cheese and half of the sweetcorn. Add another layer of the nacho chips, the remaining lentils, sweetcorn, half of the tomatoes, jalapeños then the remaining cheese. Bake in the oven for 5 to 8 minutes until the cheese is melted then remove from the heat. Finish with a few dollops of the guacamole, sour cream and tomatoes then garnish with coriander. Enjoy!
