Clover Classic Braai Sides

Clover Classic Braai sides - Pasta salad and potato salad

Pasta Salad
INGREDIENTS
¼ cup cream cheese, soft
¼ cup mayonnaise
1 cup Clover Bliss Double Cream Plain Yoghurt
½ lemon, juiced
2 cups pasta of your choice, cooked
1 cup tomatoes, cubed
½ cup cucumber, cubed
½ cup sweetcorn, cooked
½ cup olives, halved
1 tbsp chillies, finely chopped
½ tsp cayenne pepper
1 tsp oregano
salt and pepper to taste
parsley for garnish

METHOD
In a medium bowl, whisk the cream cheese vigorously to make sure it is smooth and without lumps before mixing in the mayonnaise, Clover Bliss Double Cream Plain Yoghurt and lemon juice. Set aside. In a large bowl mix together the remaining ingredients except the parsley. Fold in the sauce and season to your liking - then place in the fridge to chill. Serve immediately or chill until serving time. Enjoy!

Potato Salad

Serves: 4-6
Prep time: 5 min
Cooking time: 20 min

INGREDIENTS
500g baby potatoes, halved
2 tbsp oil
1 tbsp smoked paprika
1 tsp cumin
½ tsp ground coriander
salt and pepper to taste
1-2 cups Clover Bliss Double Cream Plain Yoghurt
200g bacon bits, fried
1 lemon, juiced
2 tbsp coriander, chopped
¼ cup raisins or blackcurrants (optional)

METHOD
Pre heat the oven to 180°C.
In a medium bowl, add the potatoes oil, spices then season to taste. Place on a baking tray with enough space between them then bake in the oven for 15-20 min - until fork tender. Once cooked, remove from the oven then allow to cool completely. You can also place the potatoes in the fridge. In a bowl, pour in the Clover Bliss Double Cream Plain Yoghurt then mix with all the remaining ingredients. Add in the cooled potatoes and season to taste. Serve immediately or chill until serving time. Enjoy!
