Clover Christmas Dessert Wreath

Serves: 8 – 10

INGREDIENTS
 
Butter Icing
2 cups icing sugar
125 g butter
pinch of salt
milk
½ tsp vanilla essence
 
Wreath
200 g biscuit with strawberry centres (e.g. Strawberry whirls)
200 g Jolly Jammers Raspberry & Vanilla Flavoured Biscuits 
10 Zoo cookies
10 pink wafer biscuits 
250 g fresh cherries
250 g fresh strawberries
200 g raspberries
12 pink macaroons
12 red macaroons
25 pink and white mini meringues
1 packet edible flowers (pink or different shades)
handful fresh mint leaves
2 cups Clover Classic Custard
 
METHOD
 
Butter Icing
Cream the icing sugar, butter, salt and enough milk to make a mixture of spreading consistency. Stir in the essence. 
 
Wreath
Pipe or spoon the icing in a circle on a large platter/slate or wooden board and spread out (to pipe a perfect circle, use a small plate as a guide and pipe around the edge of the plate. 
Stack all the biscuits, fruits, macaroons and meringues onto the icing and decorate with the flowers and mint leaves.
Spoon the custard into a glass jar and place in the centre of the wreath.
