
Clover Chikanda Burger

INGREDIENTS
¼ cup Clover Classic Mayo 2
1 tsp chopped mint
½ tsp chilli flakes
2 tbsp sweet chilli sauce
4 burger rolls
500g Chikanda
fresh lettuce
8 slices tomato
4 slices cheese
oil for frying
METHOD
In a small bowl, mix the Clover Classic Mayo 2 with the mint, chilli flakes and sweet chilli sauce. Set aside for use later.
To prep the chikanda, heat up a tbsp of oil in a pan set on medium to high heat. Cut the chikanda to desired size and shapes then sear as you would a steak or burger. Note the chikanda is already cooked so this is merely for colour. Fry enough chikanda for the 4 burgers.
To assemble, start by cutting your buns in half and toasting them. Then slather some of the sauce on the bottom bun. Top with lettuce, tomato and a portion of the chikanda. Place a cheese slice on the chikanda then add some more sauce if desired.
