Clover Chicken Skewers Wraps

INGREDIENTS
 
Basting 
¼ cup oil
2 Tbsp Dijon Mustard
2 Tbsp honey
salt and pepper to taste
 
Chicken Skewers
4 chicken breast fillets, cut in 3 cm cubes
1 onion, cut into wedges
4 sosatie skewers
 
Apple and Pea Pesto
1 apple, cored and roughly chopped
1 handful of coriander leaves
zest and juice of 1 lime
1 red chilli, deseeded
75 g peas (fresh or frozen)
 
To Serve
4 tortilla wraps
125 ml grated Clover Gouda Cheese
 
METHOD
 
Basting
Mix all the ingredients for the basting together.
 
Chicken Skewers
Thread the chicken pieces, alternating with onion pieces, onto the sosatie skewers. Brush the chicken with the basting. BBQ the chicken skewers over medium hot coals for 8–12 minutes, turning 3 to 4 times and brush the chicken with the basting after each turn. OR fry in a griddle pan on the stove.
 
Apple and Pea Pesto
Blitz the apple, coriander, lime zest and juice, red chilli and peas in a blender or food processor until roughly blended. Add a splash of water to loosen, if needed.
 
To Serve
Heat the wraps over the hot coals or in a pan. Place the skewers on the hot wraps, spoon the apple and pea pesto on top and sprinkle the cheese over. Roll the wraps up. Hold the rolled wrap tight and pull out the skewer.
