
Clover Chicken, Chilli and Cheese Quesadillas

INGREDIENTS
For the filling
170g cheddar cheese, grated
2 Tbsp. pickled jalapenos, chopped
1 cup cooked shredder chicken
½ cup Clover Classic Dairy Snack Plain
2 spring onions, finely sliced
1 bunch fresh coriander, roughly chopped
Salt and pepper to taste
To assemble
12 corn tortillas
chicken and chilli filling
4 Tbsp. unsalted butter for grilling
To serve
tomato salsa
1 cup sour cream
1 cup guacamole
METHOD
To make the filling, combine all the ingredients in a medium-sized bowl and stir together until well mixed. Season with salt and pepper to taste.
Next, lay 6 tortillas on the work surface, and divide the filling amongst the tortillas. Spread out the filling on each tortilla leaving a 1 cm border around the edge. Top with remaining tortillas and press gently to seal. Melt 1 tablespoon of butter in a medium-sized pan or skillet. Carefully place a quesadilla in the pan and fry, turning once, until golden and little bubbles appear on both sides, 4 to 5 minutes in all.
Repeat with the remaining quesadillas. Wipe out the pan between batches - if the butter burns. Divide each quesadilla into 4 slices and serve hot with the salsa, cream cheese and guacamole.
