Clover Cheesy Disco Fries

INGREDIENTS
2 cups Clover Olive Pride Blend of Seed Oils & Extra Virgin Olive Oil
1kg frozen crinkle cut chips
250g cheddar Cheese, grated
1 x tin chakalaka, mild
1 cup whole corn kernels, drained
salt and pepper to taste
1 bunch fresh coriander, roughly chopped
1 green chili, sliced
juice of one lemon
 
METHOD
Preheat your oven to 200C.

Start by preparing your chips. Heat-up the Clover Olive Pride in a large saucepan to medium high heat. Add your frozen chips and cook until golden brown. Remove from the oil with a slotted spoon and place on an oven tray lined with kitchen towel to drain of the excess oil. To obtain the best results, do this in small batches.

Next for the chakalaka gravy, add the chakalaka to a medium sized saucepan and gently heat-up. Add two tablespoons of brown onion gravy and stir through until the sauce has started to thicken. Set aside to cool slightly. 

Meanwhile, prepare a large oven tray with baking paper. Spread the chips over in an even layer and then add the chakalaka gravy, whole corn kernels and grated cheese. Season with salt and pepper to taste. Bake for 5-6 minutes until the cheese has melted and the chips have heated through.

Remove from the oven and garnish with fresh coriander, chilli and a squeeze of lemon juice. Serve hot.
