Clover Cheesy Churros

1 cup water
¼ cup unsalted butter, diced into small cubes
1 tsp sugar
1/4 tsp salt
1 cup flour
4 eggs
2 tbsp grated Clover Cheese
Vegetable oil, for frying
For sauce
2 tbsp unsalted butter
2 tbsp flour
1 cup milk
1/3 cup grated Clover cheese 
salt and pepper to taste
In a saucepan, heat up the water, ¼ cup butter, salt and sugar on medium heat. Once everything is dissolves, add your flour and stir vigorously with a wooden spoon.
Remove from the heat and add the eggs one at a time making so each egg is fully incorporated before you add the next. Batter must be thick and not runny but able to be pushed through a piping bag. You might not need to use all the eggs.
Fold in the 2 tbsp grated cheese, transfer mixture into a piping then set aside.
For the sauce, melt the remaining 2 tbsp butter in a small pot then add the flour. And whisk together. Make sure heat if on medium and allow flour to cook for about 3-4 minutes stiring continuously to make sure it doesn’t burn. Pour in your milk a little at a time and whisk alternating until your reach your desired consistency. Add more milk if you want it runnier.
Add 1/3 cup grated cheese and stir. Season and serve with the churros.
