Clover Cheese Sticks

Makes: 12- 16
Recipe time: 15 min
1 sheet puff pastry
¼ cup Clover Tussers, grated
¼ cup Clover Feta with black pepper, crumbled
¼ cup Clover Cheddar, grated
½ sundried tomatoes, chopped
1 tsp fresh rosemary, finely chopped
2 tbsp wholegrain mustard
1 tbsp honey
Handful of rocket
1 heaped tbsp soft butter
¼ cup figs, finely chopped
Flaky salt to taste
Cracked black pepper to taste
1 egg for brushing
In a small bowl, mix the whole grain mustard, honey and soft butter then set aside. Roll out the puff pastry and using a rolling pin roll flat until half the initial thickness. Using a brush or the back of a spoon, spread the mustard mixture generously onto the rolled out puff pastry. You can now fill the cheese sticks to your liking.
Sprinkle some of the figs onto a third of the puff pastry, follow with feta and some rocket. Secure the fillings by rolling and pressing down with a rolling pin. Now cut the filled puff pastry into thin strips and twist to form ribbons. Place the ribbons onto a greased tray and set aside.
Top half of the remaining puff pastry with some Clover Tussers followed black pepper and flaky salt. Flatten and twist like with the first batch and add onto the same tray.
Top the remaining pastry with some cheddar and sundried tomatoes. Roll and twist and add to the baking tray. Brush the cheese sticks with some eggwash and bake at 180°C for 12-15 or until golden brown and crispy.
