
Clover Cheese Rump Steak with Cheese and Mustard and Sauce

INGREDIENTS
2 × 500g rump steak 4cm thick
salt & pepper
2 Tbsp olive oil
1 Tbsp butter
1 clove garlic
A few sprigs of fresh rosemary
For the cheese sauce:
¼ cup butter
¼ cup flour
1 ½ lukewarm milk
1 Tbsp English mustard
1 cup Clover Cheddar Cheese, grated
salt & pepper
a pinch of cayenne pepper, optional
To serve:
fresh side salad
roasted baby potatoes
METHOD
Heat oil in a pan. Season both sides of the steak with salt and pepper. Sear the steak for 3 minutes on each side for a medium steak. Add butter, garlic and rosemary and baste the steak with the butter. Remove from the pan and allow steak to rest for about 4 minutes.
For the sauce, place a small saucepan over medium heat, melt butter. Whisk in flour and allow this to cook for about 1 minute. Slowly pour in lukewarm milk and whisk continuously until thickened and free of any lumps.
Remove from the heat and stir in Clover Cheddar Cheese and mustard and mix until the cheese has melted, and you have a cheesy, smooth sauce. Season with salt and pepper.
Serve steak with sauce and a side of salad and baby potatoes.
