Butro Boerie Burrito’s
2 T Butro oil
1 onion, finely chopped
2 cloves garlic, finely chopped
1 T ground cumin
1 T ground coriander
small pinch of cayenne pepper
1 tsp dried oregano
500g boerewors meat, casing removed
x1 tin chopped tomatoes
x1 tin black beans or kidney beans
x1 T chutney
8 flour or corn tortillas
200g cooked rice
A selection of: Avo, chopped tomatoes, sour cream, shredded lettuce,sliced red onion, grated cheddar, sliced red chilli and lime halves to serve
Heat the oil in a large pan. Fry the onions for a few minutes, then add the garlic, spices, oregano and cook for 1 minute.
Crumble over the boerewors meat and sizzle for 5 minutes, stirring until browned. Stir in the tomatoes. Simmer for 5 minutes then add in the beans and chutney. Season, stir and simmer the mixture until the sauce thickens.
To assemble the burrito’s:
Heat the tortilla’s. Pile some rice and meat mixture along each tortilla and scatter over your choice of topping. Fold over and roll up to seal.
