Malawi Mbatata Sim Sim balls

Malawi Mbatata Sim Sim balls
X3 large red or white sweet potatoes, peeled and roughly chopped
5 tsp sugar
2 tsp cinnamon
2 tsp mixed spice
1 tsp salt
4 T cornflour
200g cheese, grated
¾ c white sesame seeds
oil for deep frying 
Cook sweet potatoes until soft. Mash with sugar, spices,salt and cornflour. If the mixture is too soft to form balls, add more cornflour. 
Add cheese and mix until well combined. 
Roll the dough into wallnut sized balls. Pour sesame seeds into a shallow bowl and coat the balls by rolling them in the seeds. 
In a pot, heat oil over medium heat and fry the balls until golden brown all over. 
Place on paper towel to drain excess oil. 
Serve as a starter or on a cocktail platter with Ethiopian Ayib
Egyptian Ta’amiya
250g dried broad beans or small white beans, soaked overnight in 3 L water
90g leeks, finely sliced and washed
60g coriander leaves, washed and chopped
60g parsley, washed and chopped
40g spring onion
5 cloves garlic
½ tsp black pepper
1 tsp salt
1 tsp chilli powder
oil for frying
Drain the beans and puree in a blender for 3 minutes. Add all the other ingredients and blend until the mixture resembles a stiff dough. Mould the mixture into round patties. 
Fry the patties until golden brown. 
Serve with Ayib
Ethiopian Ayib
250g chunky cottage cheese
250g plain thick yoghurt
1 tsp fresh oregano
1 tsp fresh basil
½ T lemon zest
½ T  orange zest
1tsp chopped fresh thyme
¼ c chopped spring onion
¼ c chopped red onion
¼ c chopped fresh coriander 
1 tsp smoked paprika
2 tsp minced garlic
¼ tsp black pepper
½ tsp salt
1 tsp honey or sweetner of choice
Combine all the ingrdients in a bowl and mix well with a spatula or spoon
Let it rest for 15 minutes and allow the flavours to develop.
