Clover Boerewors & Chakalaka Lasagne

INGREDIENTS

2 Tbsp Clover Classic Fat Spread
1 onion, chopped
2 tsp crushed garlic
1 tin chopped tomatoes
1 Tbsp tomato paste
2 tsp dried oregano
Salt & pepper
250g boerewors, cooked and sliced
½ cup mild chakalaka
10 – 12 sheets lasagne, cooked according to packet instructions
4 cups store bought white sauce
1 ½ cups cheddar cheese, grated
 
To serve
green salad of your choice
 
METHOD

Preheat oven to 180ºC. Heat the Clover Classic Fat Spread in a large pan, add onions and cook until translucent. Add in garlic, tinned tomatoes, and tomato paste allow to simmer on medium to low heat for 5 minutes before adding in boerewors and chakalaka. Season with dried oregano, salt and pepper and allow to cook for another 5 to 10 minutes until the sauce has reduced.

To assemble the lasagne, spoon some white sauce onto the bottom of an oven proof dish, followed by a few lasagne sheets and top with boerewors and chakalaka mixture. Continue layering until the baking dish is filled. Top with remaining white sauce and sprinkle a generous amount of the grated cheddar cheese on top. Bake for 15 to 20 minutes.  Allow to sit for 10 minutes before serving with a salad on the side.
