Clover Bliss Yoghurt and Broccoli Quiche


Clover Yoghurt & Broccoli Quiche

Serves: 4 as a meal
Preparation: 15 minutes
Cooking time: 35 minutes

4 fillo pastry sheets 
3 Tbsp melted butter
200 g long stem broccoli or small broccoli florets
3 eggs
¼ cup milk
1 cup Clover Bliss Double Cream Yoghurt
salt and pepper to taste
½ cup grated Cheddar cheese
Greek salad, to serve
Preheat the oven to 180 °C. Grease a 22 cm pie/tart dish. Cut the fillo sheet into a square.
Brush the melted butter onto three of the squares of fillo pastry. Stack the fillo sheets onto each other with the one without the butter on top.
Line the prepared pie dish with the fillo layers. Arrange the long-stem broccoli or florets evenly over the fillo layers.
In a mixing bowl lightly whisk the eggs and milk together. Add the yoghurt, whisk to combine and season with salt and pepper. Stir through half of the grated cheese and pour it over the broccoli.
Sprinkle the remaining cheese on top. Bake in the oven for 30—35 minutes or until a knife inserted in the center comes out clean. 
Allow to cool for 10—15 minutes before slicing.
Serve with a Greek salad.
