Clover Apricot Malva Pudding

INGREDIENTS
 
Pudding
2 eggs
¾ cup sugar
1½ cup cake flour
1½ tsp baking powder
1½ tsp bicarbonate of soda
pinch salt
2½ Tbsp apricot jam
3 Tbsp vinegar
¾ cup milk
8 apricots, halved / or tinned apricots (16 apricot halves)
 
Sauce
1 cup milk
1 cup sugar
½ cup hot water
125 g margarine or butter

METHOD
 
Pudding
Preheat the oven to 180 °C.
Grease a large ovenproof glass or porcelain dish. Beat the eggs and sugar together until light and fluffy.
Sift the flour, baking powder, bicarb and salt together and fold into the egg and sugar mixture.
Add the apricot jam, vinegar and milk and beat until the mixture is smooth. Pour the batter into the prepared baking dish. Arrange the apricot halves, cut side up, on top of the batter. Bake for 35—40 minutes until cooked.
 
Sauce
When the pudding is almost done, heat the ingredients for the sauce, ensuring that you melt all the sugar and simmer for 5 minutes. When the pudding is done, remove from the oven, and pour the warm sauce over the warm pudding. The pudding will absorb all the sauce.
Serve warm with the apricot dairy snack.
