Classic Lucky Star Pilchard Stew


Classic Pilchard Stew

Recipe: Lucky Star
Serves 4: 
Preparation Time:  10 minutes
Cooking Time: 25 minutes
1 can (400 g) Lucky Star Pilchards in Tomato Sauce                                 
1 medium onion, chopped                                                         
1 handful of red, green & yellow peppers, chopped                                
1 can (400 g) chopped tomatoes                                                            
3 Tbsp (45 ml) cooking oil                                                                                  
1 tsp garlic, crushed                                                                  
1 Tbsp (15 ml) paprika                                                                           
1 Tbsp (15 ml) mild curry powder                                                                       
1 bunch fresh coriander, for garnish                                                                   
salt and pepper to taste
In a medium saucepan heat the oil and fry the onion until translucent. Add peppers, garlic and cook for about 3 - 5 minutes. Add curry powder and paprika and cook for about 5 minutes, stirring occasionally, then add the tomatoes and simmer with the lid on for about 10 minutes. Add the fish, stirring gently until well combined. Allow to simmer for a few minutes. Top with fresh coriander and enjoy!
Serving Suggestions:
Serve with rice of your choice. This dish goes well with a delicious coleslaw or Lucky Star Chakalaka.

Lucky Star Pizza
1 x recipe of the classic pilchard stew 
1 X ready-made pizza 
1 cup cheddar cheese, grated                                        
1 cup mozzarella cheese, grated 
1 bunch fresh basil or rocket, for garnish
Preheat the oven to 200°C. Spread the pilchard stew over the pizza base. 
Mix the cheddar and mozzarella cheese together and sprinkle half over. Place pizza onto a lightly greased oven tray and bake in a preheated oven for about 15 minutes or until the cheese is golden and bubbling. Top with rocket or basil leaves and enjoy!
